Basil is a very good friend of mine!



Being Italian makes BASIL one of my favorite herbs. I love to use basil when making any type of pasta dish. I use Genovese Basil, which has a bright green leaf. It is a traditional Italian variety.


Last night I decided to branch out a little with my love of basil and made a Tomato, Basil and Feta Cheese Bruschetta for the top of Salmon ( very similar to the dish Marsha and I made back in June). I am submitting this fresh, yummy recipe to Susan from FoodBlogga who is this week’s host of Kalyn’s event, Weekend Herb Blogging.



Tomato, Basil and Feta Cheese Bruschetta over Salmon

Cut 6-8 roma tomatoes
1/2 cucumber finely chopped
1/2 red onion finely chopped
6-8 leaves of fresh basil, chopped finely
Feta Cheese cut into small squares
2 tablespoons vegetable oil
3 tablespoons balsamic vinegar
Salt and Pepper to taste



I placed a nice piece of broiled Salmon on a bed of Bok Choy and then placed this delightful Bruschetta on the top!

What a fun idea! We eat tons of salmon, and I have made a tomato-tarragon salsa, but this sounds really good. Can't have too much basil - well, I can't, actually 'cause I have to share with the snails.
